Lasagna Soup

From Taste of Home’s Quick Cooking – S/O 1999

Ingredients
  

  • 1 pound ground beef
  • ½ cup onion
  • 1 pkg (7 ¾ oz) lasagna dinner mix
  • 5 cups water
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 can (7 oz) whole kernel corn undrained
  • 1 small zucchini chopped
  • grated Parmesan cheese

Instructions
 

  • In a soup pot, cook beef and onion over medium heat until meat is no longer pink.
  • Add seasoning mix from lasagna dinner and mix into meat.
  • Add water, tomatoes, and corn; bring to a boil. Reduce heat; cover and simmer for 10 minutes, stirring occasionally.
  • Add lasagna noodles from dinner package and zucchini. Cover and simmer for 10-15 minutes, until noodles are tender. Serve immediately with parmesan cheese.

Notes

Yield: 8-10 Servings
BartClan Variation to serve more people:
Use 1 1/2 pounds of meat – beef or ground turkey. Use 1 whole large onion. Double the tomatoes, corn, zucchini, and Parmesan cheese.
