Seafood Crepes
Ingredients
- Crepes see link in notes
- ¼ cup (about 3 medium) fresh mushrooms, chopped
- 4 tbsp green onion, chopped and divided
- 2 tbsp margarine or butter
- ⅔ cup small cooked shrimp
- 1 pkg (6 oz) frozen crabmeat, thawed and drained
- ½ cup half-and-half
- 2 pkgs (3 oz each) cream cheese, cubed
- 1 cup (4 oz) Swiss cheese, shredded
Instructions
- Prepare Crepes.
- Cook and stir mushrooms and 2 tbsp green onion in butter until onion is tender.
- Stir in seafood, half-and-half, and cream cheese.
- Cook over medium heat, stirring constantly, until cheese is melted.
- Spoon about ¼ cup filling down center of each crepe; roll up.
- Place in dish; sprinkle with Swiss cheese.
- Microwave uncovered on high (100%) until cheese is melted and crepes are heated through, 4 to 6 minutes; sprinkle with remaining 2 tbsp green onion.
