Seafood Crepes

Ingredients
  

  • Crepes see link in notes
  • ¼ cup (about 3 medium) fresh mushrooms, chopped
  • 4 tbsp green onion, chopped and divided
  • 2 tbsp margarine or butter
  • cup small cooked shrimp
  • 1 pkg (6 oz) frozen crabmeat, thawed and drained
  • ½ cup half-and-half
  • 2 pkgs (3 oz each) cream cheese, cubed
  • 1 cup (4 oz) Swiss cheese, shredded

Instructions
 

  • Prepare Crepes.
  • Cook and stir mushrooms and 2 tbsp green onion in butter until onion is tender.
  • Stir in seafood, half-and-half, and cream cheese.
  • Cook over medium heat, stirring constantly, until cheese is melted.
  • Spoon about ¼ cup filling down center of each crepe; roll up.
  • Place in dish; sprinkle with Swiss cheese.
  • Microwave uncovered on high (100%) until cheese is melted and crepes are heated through, 4 to 6 minutes; sprinkle with remaining 2 tbsp green onion.
