Simple Granola

Ingredients
- 6 cups rolled oats
- ½ cup (114 g) coconut oil, melted
- ½ cup honey (or ⅔ cup maple syrup or rapadura/sucanat sugar)
- ¼ cup water
- 1 tsp cinnamon optional
Instructions
- Preheat oven to 300°F.
- In a large bowl, combine oats, coconut oil, honey, and cinnamon, mixing well.
- Spread granola mixture evenly on two prepared baking sheets and bake for 25 to 30 minutes, rotating the top and bottom pans halfway through; no need to stir. Granola should be a light golden brown.
- Let granola cool completely, until it’s crunchy, and store in an airtight container for up to two weeks.
