Yogurt Pancakes

This recipe uses yogurt for a tart richness.

Ingredients
  

  • 1 Tbsp sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 ½ cup all-purpose flour
  • 3 eggs
  • 1 cup yogurt or kefir plain or flavored

Instructions
 

  • Mix the sugar, baking powder, soda, salt, and flour together in a large bowl. Add the eggs and yogurt and mix until smooth.
  • Pour a spoonful of batter (enough to make pancakes 4 inches in diameter) on a hot, lightly greased griddle or similarly prepared large frying pan. Turn when bubbles form and break and the edges are set. Brown lightly and top pancakes with flavored syrup or fruit.
  • *Can add ¼ cup or less of milk or cream to thin out the batter.

Makes 12 4-inch pancakes
