Best Ever Banana Bread
From Sara Sparks – Whiteman AFB, Missouri – 2003
Ingredients
- 1 ¾ cups all-purpose flour
- 1 ½ cups sugar*
- 1 teaspoon baking soda
- ½ teaspoon salt
- 2 whole eggs
- 2 medium bananas – over-ripe and mashed
- ½ cups vegetable oil
- ¼ cup & 1 Tbsp buttermilk
- 1 teaspoon vanilla
- 1 cup chopped walnuts – optional
Instructions
- Preheat oven to 325°F (165°C).
- In a large mixing bowl, stir together flour, sugar, baking soda, and salt.
- In a small mixing bowl, combine eggs, bananas, oil, buttermilk, and vanilla; add to flour mixture, stirring just until combined.
- Fold in nuts. Pour into greased 9" x 5" x 3" baking pan.
- Bake for 1 hour and 20 minutes or until bread tests done. Cool on wire rack.
Notes
*Sugar can be reduced to ¾ cup.
Recipe does not double well.
To make buttermilk: add 1 Tbsp vinegar to regular milk; let sit for a few minutes.
