Best Ever Banana Bread

Ingredients
  

  • 1 ¾ cups all-purpose flour
  • 1 ½ cups sugar*
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 whole eggs
  • 2 medium bananas - over-ripe and mashed
  • ½ cups vegetable oil
  • ¼ cup & 1 Tbsp buttermilk
  • 1 teaspoon vanilla
  • 1 cup chopped walnuts - optional

Instructions
 

  • Preheat oven to 325°F (165°C).
  • In a large mixing bowl, stir together flour, sugar, baking soda, and salt.
  • In a small mixing bowl, combine eggs, bananas, oil, buttermilk, and vanilla; add to flour mixture, stirring just until combined.
  • Fold in nuts. Pour into greased 9" x 5" x 3" baking pan.
  • Bake for 1 hour and 20 minutes or until bread tests done. Cool on wire rack.

Notes

*Sugar can be reduced to ¾ cup.
Recipe does not double well.
To make buttermilk: add 1 Tbsp vinegar to regular milk; let sit for a few minutes.
