Corn Custard

Ingredients
  

  • 2 cups corn fresh, canned, or frozen
  • 2 eggs, slightly beaten
  • 2 Tbsp sugar
  • 1 Tbsp butter
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¾ cup evaporated milk

Instructions
 

  • Lightly chop corn, mix all ingredients together.
  • Pour into a greased casserole and bake at 350°F until firm, approximately 1 hour. An inserted knife should come out clean and the center will be a little jiggly.

Notes

Grated onion or finely chopped green pepper may be browned lightly in butter and added.
Can be assembled ahead and refrigerated.
