Corn Custard
From Meta Bertha Meyer Mandigo (Carol Bartholomew's Mother)
- 2 cups corn fresh, canned, or frozen
- 2 eggs, slightly beaten
- 2 Tbsp sugar
- 1 Tbsp butter
- ½ tsp salt
- ¼ tsp black pepper
- ¾ cup evaporated milk
Lightly chop corn, mix all ingredients together.
Pour into a greased casserole and bake at 350°F until firm, approximately 1 hour. An inserted knife should come out clean and the center will be a little jiggly.
Grated onion or finely chopped green pepper may be browned lightly in butter and added.
Can be assembled ahead and refrigerated.
