Glorified Rice

Ingredients
- 2 cups Minute Rice* uncooked
- 1 can (20 oz) Crushed Pineapple
- Water
- 8 oz Cool Whip
- 15 oz Strawberries, Peaches, or other fruit (fresh or canned) sliced
Instructions
- Drain pineapple, reserving the juice in a measuring cup. Let pineapple chill.
- Add water to pineapple juice to make enough liquid to cook rice, according to package directions. Cook rice, watching it carefully.
- Chill rice completely. (Preferably do all of this the day before.)
- Mix rice and pineapple shortly before serving. Fold in Cool Whip, then gently fold in fruit. Garnish with halved strawberries or peach slices and mint sprigs.
Notes
*2 cups uncooked instant rice is approximately 1 1/2 cups uncooked long grain rice (about 4-5 cups cooked rice)
