Glorified Rice

Ingredients
  

  • 2 cups Minute Rice* uncooked
  • 1 can (20 oz) Crushed Pineapple
  • Water
  • 8 oz Cool Whip
  • 15 oz Strawberries, Peaches, or other fruit (fresh or canned) sliced

Instructions
 

  • Drain pineapple, reserving the juice in a measuring cup. Let pineapple chill.
  • Add water to pineapple juice to make enough liquid to cook rice, according to package directions. Cook rice, watching it carefully.
  • Chill rice completely. (Preferably do all of this the day before.)
  • Mix rice and pineapple shortly before serving. Fold in Cool Whip, then gently fold in fruit. Garnish with halved strawberries or peach slices and mint sprigs.

Notes

*2 cups uncooked instant rice is approximately 1 1/2 cups uncooked long grain rice (about 4-5 cups cooked rice)
