15ozStrawberries, Peaches, or other fruit (fresh or canned)sliced
Instructions
Drain pineapple, reserving the juice in a measuring cup. Let pineapple chill.
Add water to pineapple juice to make enough liquid to cook rice, according to package directions. Cook rice, watching it carefully.
Chill rice completely. (Preferably do all of this the day before.)
Mix rice and pineapple shortly before serving. Fold in Cool Whip, then gently fold in fruit. Garnish with halved strawberries or peach slices and mint sprigs.
Notes
*2 cups uncooked instant rice is approximately 1 1/2 cups uncooked long grain rice (about 4-5 cups cooked rice)
