Martha White Waffles

Servings 12 4-inch waffles

Ingredients
  

  • 2 eggs separated
  • 1 3/4 cups sifted self-rising flour
  • 1 1/4 cups milk
  • 1/2 cup vegetable oil

Self-Rising Flour

  • 2 1/2 tsp baking powder 1 tsp slightly generous
  • 1 tsp salt scant
  • 1 3/4 cups flour minus space for other ingredients

Instructions
 

  • Preheat waffle iron. Beat egg whites with electric mixer in mixing bowl until stiff but not dry.
  • Beat yolks is separate mixing bowl until blended. Add flour, milk and vegetable oil to the yolks; blend well.
  • Gently fold in egg whites with a rubber spatula until blended. Bake in hot waffle iron.

Notes

Tips: Do not pour batter into waffle iron until the light goes off. Do not lift the lid while the waffle is steaming. Waffle is done when the steaming stops.
