Moo Shu Pork Wraps

Ingredients
Pork
- 1 red bell pepper
- 1 pkg (8 oz/250 g) white or cremini mushrooms
- 1 lb (450 g) ground pork
Sauce
- 3 green onions
- 1 garlic clove
- 3 tbsp (45 mL) soy sauce
- 3 tbsp (45 mL) honey
- 1 tbsp (15 mL) ketchup
- ½ tsp (2 mL) rice wine or apple cider vinegar
- ¼ tsp (1 mL) sesame oil
- 1 ½ tsp cornstarch
To Serve
- 8 medium (6–8"/15–20 cm) flour tortillas
- 1 cup (250 mL) cabbage and carrots, thinly sliced raw or lightly sautéed
Instructions
- Cut off the top of the bell pepper and remove the seeds and veins. Slice the mushrooms and bell pepper.
- Add the pork, bell pepper, and mushrooms to a pan and cook on med to med high heat until the pork is cooked through. Drain any excess liquid.
- Thinly slice the green onions, and place the whites into a food processor. Reserve the greens for garnishing. Add the garlic clove and the remaining sauce ingredients to the processor and process until combined.
- Add the sauce to the pan. Cover and cook for 3–4 minutes, or until the sauce is warmed through.
- Serve on tortillas and top with the cabbage and carrots. Garnish with the greens of the onions.
