1cup (250 mL)cabbage and carrots, thinly slicedraw or lightly sautéed
Instructions
Cut off the top of the bell pepper and remove the seeds and veins. Slice the mushrooms and bell pepper.
Add the pork, bell pepper, and mushrooms to a pan and cook on med to med high heat until the pork is cooked through. Drain any excess liquid.
Thinly slice the green onions, and place the whites into a food processor. Reserve the greens for garnishing. Add the garlic clove and the remaining sauce ingredients to the processor and process until combined.
Add the sauce to the pan. Cover and cook for 3–4 minutes, or until the sauce is warmed through.
Serve on tortillas and top with the cabbage and carrots. Garnish with the greens of the onions.
