Oatmeal Pancakes

Big batch of hearty pancakes.
Kraemer Family Recipe – Grand Forks, ND – 1990s

Ingredients
  

  • 5 eggs
  • cup sugar
  • ½ cup vegetable oil
  • 4 cups buttermilk*
  • 2 cups quick oats
  • 1 ½ cups white flour
  • 1 cup wheat kernels, ground into flour about 1 ½ C wheat flour
  • 4 teaspoons baking powder
  • 3 teaspoons baking soda
  • 2 teaspoons salt

Instructions
 

  • Blend first three ingredients. Add oatmeal and milk; stir well and allow to sit.
  • Mix remaining dry ingredients together, then add to milk mixture. Stir well.
  • Add more milk or flour if too thin or thick. Fry. Makes about 45 pancakes.

Notes

Best served with a homemade fruit sauce.
*Can substitute buttermilk with 3 1/2 cups milk mixed with 1/3 cup vinegar.
