Oatmeal Pancakes
Big batch of hearty pancakes.Kraemer Family Recipe – Grand Forks, ND – 1990s
Ingredients
- 5 eggs
- ⅓ cup sugar
- ½ cup vegetable oil
- 4 cups buttermilk*
- 2 cups quick oats
- 1 ½ cups white flour
- 1 cup wheat kernels, ground into flour about 1 ½ C wheat flour
- 4 teaspoons baking powder
- 3 teaspoons baking soda
- 2 teaspoons salt
Instructions
- Blend first three ingredients. Add oatmeal and milk; stir well and allow to sit.
- Mix remaining dry ingredients together, then add to milk mixture. Stir well.
- Add more milk or flour if too thin or thick. Fry. Makes about 45 pancakes.
Notes
Best served with a homemade fruit sauce.
*Can substitute buttermilk with 3 1/2 cups milk mixed with 1/3 cup vinegar.
