Oatmeal Pancakes
Big batch of hearty pancakes.

Ingredients

eggs
⅓
cup
sugar
½
cup
vegetable oil
4
cups
buttermilk*
2
cups
quick oats
1 ½
cups
white flour
1
cup
wheat kernels, ground into flour
about 1 ½ C wheat flour
4
teaspoons
baking powder
3
teaspoons
baking soda
2
teaspoons
salt
Instructions
Blend first three ingredients. Add oatmeal and milk; stir well and allow to sit.
Mix remaining dry ingredients together, then add to milk mixture. Stir well.
Add more milk or flour if too thin or thick. Fry. Makes about 45 pancakes.
Notes
Best served with a homemade fruit sauce.
*Can substitute buttermilk with 3 1/2 cups milk mixed with 1/3 cup vinegar.
