Pumpkin Spice Bread
Modified slightly from Taste of Home.
Ingredients
- 2 cups (400 g) sugar
- 1 cup vegetable oil
- 4 eggs lightly beaten
- 2 cups pumpkin
- 3 ½ cups (440 g) all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- ½ teaspoon baking powder
- ¼ teaspoon ground allspice
- ¼ teaspoon ground cloves
Instructions
- In a large bowl, combine sugar, oil and eggs. Add pumpkin and mix well. Combine the flour, baking soda, salt, cinnamon, nutmeg, baking powder, cloves and allspice; add to the pumpkin mixture, beating well.
- Pour into two greased 9×5-inch loaf pans. Bake at 350°F for 60-65 minutes or until a toothpick inserted in the center comes out clean. Cool in pans 10 minutes before removing to a wire rack to cool completely.
Notes
Muffins or Donuts: fill pans 2/3 full (3 Tbsp) and bake at 350°F for 15-20 minutes. Makes 2 1/2 dozen.
Powder Sugar Frosting
Ingredients
- 2 Tbsp butter softened
- 1 cup (120 g) powdered sugar
- 1 tsp vanilla halve if using Mexican vanilla
- 2 Tbsp milk use more to make a thin glaze
Instructions
- Beat butter until softened. Add remaining ingredients and mix until smooth. Spread or pipe onto baked goods.
