Rhubarb Surprise Cake

Ingredients
- 3 cups rhubarb diced
- 1 ½ cups water
- 1 cup sugar
- 1 box (3 oz) strawberry flavored Jell-O
- miniature marshmallows
- 1 box white cake mix
Instructions
- Combine first three ingredients in a saucepan and bring to a boil. Add box of jello. Stir together and set mixture aside.
- Preheat oven to 350°F. Butter the bottom of a 9×13-inch cake pan. Cover the bottom of the pan with miniature marshmallows (or quartered large marshmallows).
- Prepare cake mix according to package directions using the whole egg recipe. Pour the cake batter over the marshmallows in pan, spreading evenly to all edges.
- Ladle the rhubarb mixture onto the cake batter, again evenly covering the whole pan. Put on middle rack in oven and bake for 45-50 minutes (until cake is done).
- Let cool at least 30 minutes. Serve by flipping pieces upside down.
