Rhubarb Surprise Cake

- 3 cups rhubarb diced
- 1 ½ cups water
- 1 cup sugar
- 1 box (3 oz) strawberry flavored Jell-O
- miniature marshmallows
- 1 box white cake mix
Combine first three ingredients in a saucepan and bring to a boil. Add box of jello. Stir together and set mixture aside.
Preheat oven to 350°F. Butter the bottom of a 9x13-inch cake pan. Cover the bottom of the pan with miniature marshmallows (or quartered large marshmallows).
Prepare cake mix according to package directions using the whole egg recipe. Pour the cake batter over the marshmallows in pan, spreading evenly to all edges.
Ladle the rhubarb mixture onto the cake batter, again evenly covering the whole pan. Put on middle rack in oven and bake for 45-50 minutes (until cake is done).
Let cool at least 30 minutes. Serve by flipping pieces upside down.
