Spiced Pumpkin Pancakes

Ingredients
  

  • 2 cups flour
  • 2 Tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon salt
  • 2 whole eggs
  • 1 cup pumpkin – cooked and mashed
  • 1 ¾ cups milk
  • 2 Tablespoons vegetable oil

Instructions
 

  • Mix dry ingredients and set aside.
  • Beat together eggs, pumpkin, milk, and oil. Add dry ingredients and stir just until moistened. Fry on hot griddle and serve with real maple syrup.

Notes

Home-cooked pumpkin is best; however, you can use canned pumpkin. If you do so, increase the milk to 2 cups.
