Spiced Pumpkin Pancakes

Ingredients
- 2 cups flour
- 2 Tablespoons sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- ¼ teaspoon salt
- 2 whole eggs
- 1 cup pumpkin – cooked and mashed
- 1 ¾ cups milk
- 2 Tablespoons vegetable oil
Instructions
- Mix dry ingredients and set aside.
- Beat together eggs, pumpkin, milk, and oil. Add dry ingredients and stir just until moistened. Fry on hot griddle and serve with real maple syrup.
Notes
Home-cooked pumpkin is best; however, you can use canned pumpkin. If you do so, increase the milk to 2 cups.
