Spiced Pumpkin Pancakes

Ingredients

flour

sugar

teaspoons
baking powder

baking soda

cinnamon

nutmeg

teaspoon
salt

whole
eggs

cup
pumpkin - cooked and mashed
1 ¾
cups
milk
2
Tablespoons
vegetable oil
Instructions
Mix dry ingredients and set aside.
Beat together eggs, pumpkin, milk, and oil. Add dry ingredients and stir just until moistened. Fry on hot griddle and serve with real maple syrup.
Notes
Home-cooked pumpkin is best; however, you can use canned pumpkin. If you do so, increase the milk to 2 cups.
