2cupsall-purpose flour(1C AP flour + 1C whole wheat flour may be used instead)
½cupold fashioned oats
¾tspbaking soda
½tspbaking powder
½tspsalt
¾cupminiature semisweet chocolate chips
Instructions
In a large bowl, beat egg, oil and sugar until smooth. Stir in bananas. Combine the flour, oats, baking soda, baking powder and salt; stir into the banana mixture just until moistened. Stir in chocolate chips.
Fill greased muffin cups three-fourths full. Bake at 375° for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.
