Cookie Salad

A sweet and fruity pudding-based salad from the Sauer Family.

Ingredients
  

  • 1 pkg (3.4 oz) instant vanilla pudding
  • 2 cups buttermilk
  • 8 ounces Cool Whip
  • 1 can (16 oz) chunky mixed fruit, drained
  • 1 cup miniature marshmallows
  • 1 pkg fudge-striped shortbread cookies

Instructions
 

  • Mix the pudding with buttermilk according to package directions. Allow to thicken a few minutes.
  • Fold in Cool Whip, fruit, and marshmallows. Chill.
  • Chop 12 cookies into 1/8ths. No more than 2 hours before serving, fold cookie pieces into pudding mix.
  • Continue to chill. Prior to serving, garnish with additional whole and/or crumbled cookies.

Yields 6 cups.
