In a large bowl combine oats, coconut, wheat germ, (sunflower seeds and cashews, if now, otherwise add later.)
Mix together oil, honey, water, salt (omit if nuts are salted), and vanilla. Pour over dry mixture, stir to coat. Spread mixture on two greased baking sheets.
Bake at 350°F for 30 minutes - can also try baking at 225° for 30 minutes or longer. Stir frequently and be careful it doesn't get too brown.
Add raisins. Cool and store in airtight containers. Makes 2 quarts.
