Beat eggs in blender. Add milk, sugar, and pumpkin; blend. Add all remaining ingredients and blend thoroughly. Pour into greased round 9" layer cake pan.
Bake at 350ºF for 40-50 minutes, until knife tip comes out clean.

An easy tasty pumpkin quiche; serve warm, with ice cream or whipped cream, if desired. Serves 6.
We usually make 2 pans, since a can of evaporated milk is 1 ½ cups.
