Mexican Rice

Ingredients
  

  • 3 Tbsp vegetable oil
  • ¼ cup onion chopped
  • 1 tsp Mexican or taco seasoning
  • ½ tsp salt
  • 1 cup long-grain rice
  • 2 cups chicken broth or substitute with turkey, pork, or beef broth
  • ½ cup tomato sauce

Instructions
 

  • Heat oil in a large saucepan over medium heat. Add onion and cook until tender. Add seasoning, salt, and rice; cook, stirring constantly, until rice is golden.
  • Stir in chicken broth and tomato sauce; bring to a boil. Reduce heat to low, cover, and simmer for 20 to 25 minutes. Fluff rice with a fork.
