In stockpot or large saucepan on medium low heat, add enough olive oil to cover bottom.
Add minced garlic and sauté lightly - be careful not to burn garlic.
Stir in tomato paste until well combined.
Add tomato sauce - rinse cans lightly and add water.
While stirring often, add spices. Mix well.
Add sugar and parmesan.
Simmer for 2-4 hours, stirring almost constantly to prevent sauce from burning.
Add grease from meatballs to sauce.
Add meatballs 1-2 hours before serving.
