Liberally apply salt and pepper to both sides of meat. Sear in a pan on high heat until both sides are brown.
Place meat on a pan and broil 5 minutes or until meat reaches 10 degrees below the appropriate temperature. Remove meat from oven, cover with foil, and allow to rest for 5-10 minutes.
