Mexican Rice

Ingredients
- 3 Tbsp vegetable oil
- ¼ cup onion chopped
- 1 tsp Mexican or taco seasoning
- ½ tsp salt
- 1 cup long-grain rice
- 2 cups chicken broth or substitute with turkey, pork, or beef broth
- ½ cup tomato sauce
Instructions
- Heat oil in a large saucepan over medium heat. Add onion and cook until tender. Add seasoning, salt, and rice; cook, stirring constantly, until rice is golden.
- Stir in chicken broth and tomato sauce; bring to a boil. Reduce heat to low, cover, and simmer for 20 to 25 minutes. Fluff rice with a fork.
