Norberg’s Secret Meatballs
Ingredients
- 3 lbs Ground Burger
- 1 lb Ground Pork
- 1 cup Water
- 1 cup Bread Crumbs
- 1 cup Oatmeal
- 4 Eggs
- 2 tsp Salt OR Garlic Salt
- 2 tsp Black Pepper
- 1 tsp Red Pepper
- 3 Tbsp Garlic Powder to taste
- 5 Tbsp Parsley
- 2 tsp Basil
- 4 Tbsp Parmesan
Instructions
- Preheat oven to 350°F.
- In large mixing bowl, combine ground burger and pork.
- Add all other ingredients and mix well.
- Roll into ~2-3 inch balls and place on well-greased cookie sheet.
- Bake for 10 minutes, turn. Bake for another 5-10 minutes until fully cooked.
Norberg’s Secret Spaghetti Sauce
Ingredients
- 1 can (105 oz) Tomato Sauce*
- 4 cans (6 oz ) Tomato Paste*
- Olive Oil
- 4 cloves minced Garlic to taste
- 1 tsp Black Pepper
- 1 Tbsp Salt to taste
- ¼ tsp Thyme
- ½ tsp Red Pepper
- 1 Tbsp Basil
- 1 heaping Tbsp Parsley
- ½ tsp Celery Leaves OR Celery Salt
- 2-4 Bay Leaves
- Dash of Rosemary optional
- 1 Tbsp Sugar
- ¾ cup Parmesan to taste
- Dash of Red Wine optional
- Grease from Meatballs**
Instructions
- In stockpot or large saucepan on medium low heat, add enough olive oil to cover bottom.
- Add minced garlic and sauté lightly – be careful not to burn garlic.
- Stir in tomato paste until well combined.
- Add tomato sauce – rinse cans lightly and add water.
- While stirring often, add spices. Mix well.
- Add sugar and parmesan.
- Simmer for 2-4 hours, stirring almost constantly to prevent sauce from burning.
- Add grease from meatballs to sauce.
- Add meatballs 1-2 hours before serving.
Notes
*Original recipe is about 4-1 ratio Sauce to Paste. For thicker sauce, use 3-1 ratio Sauce to Paste.
